Red Lentil Lemon Rice Soup

 I've posted a lentil soup on here, but tonight's was super simple, tasty, and hearty without being high calorie. 

Ingredients:

1 onion, diced

1 TBS oil

4 cloves garlic

1 medium carrot, diced

1 jalapeno pepper, chopped

1 tsp ground cumin

1/2 tsp cumin seed

1/2 tsp ground coriander

1.5 cups of red lentils, rinsed

1/2 cup of white rice

8 cups of broth or 8 cups of water with 4 Edward & Sons Not-Chick'n Bouillon cubes

1 lemon, cut into wedges

Salt, pepper, and sumac, to taste (optional)

Steps (Pressure cooker):

Set the pressure cooker to saute and add the oil and diced onion. Cook for about 5 minutes, stirring often so the onions get slightly golden. 

Add the carrot, pepper, and garlic and cook for another 2 minutes, then add everything else. 

Put on the lid and set to high pressure for 15 minutes.

After 15 minutes, let the pressure come down on its own for 5 minutes, then do a quick release. Your soup will be thick and should have a bit of texture. 

Squeeze a lemon wedge into each individual serving to the individual's preference and top with a sprinkle of sumac if you have it (it also imparts a tart, lemony flavor, so you can just use more sumac if you have no lemon or more lemon if no sumac). Add salt and pepper to taste, if needed.

It's simple and soothing and healthy! It's best served with warm pita bread.
